It’s actually funny how much I love a chocolate malt, seeing as how I hate chocolate malted milk balls. (Say that five times fast!) They’re just too crunchy for my taste. But a homemade chocolate malt shake is my absolute favorite! I thought, why not just turn it into ice cream?!

Chocolate Malt Ice Cream

The sweet and nutty flavor of malted milk powder brings out the richness of the chocolate in this easy homemade ice cream.

Simply whisk cocoa powder, malted milk powder, and sugar together until no lumps appear. You can also sift these ingredients with a fine mesh sieve for best results.

Then gradually whisk in the heavy cream and milk, and stir until the dry ingredients dissolve. Pour the mixture into an ice cream maker and process according to the directions of your machine. So easy!

At this point you will either enjoy the ice cream soft-serve style, or place it in a container to freeze completely. You could fold in malted milk balls before you freeze it, if you want an ice cream with chunks, but I love the smooth, creamy, pure chocolate malt flavor as-is.

I love homemade ice cream so much that I have two machines! If I forget to freeze the bowl for my Cuisinart Ice Cream Maker, then I just use the Ice Cream Maker Attachment on my Bosch Universal Mixer with some ice and rock salt. Both are great ice cream makers!

More Ice Cream Flavors:

This ice cream is so so amazing! My dad always used to take me for chocolate malts from Foster’s Freeze when I was young. This ice cream is that taste of childhood! It’s my new favorite obsession!

I’m so glad you like it! It’s a favorite of ours too. Thanks for sharing your experience with the recipe Brandi!

Any recommendations on adapting this recipe into a no-churn version? I don’t have an ice cream maker. Thanks

    • Amber Brady Reply

Most no churn ice creams you will whip heavy cream and then fold in sweetened condensed milk. I would whisk the cocoa powder and malt milk powder with the sweetened condensed milk and leave out the additional sugar and milk. Here’s a similar no churn recipe so you can see the instructions: https://www.dessertnowdinnerlater.com/no-churn-cake-batter-ice-cream/

I made this ice cream yesterday and it had rave reviews from everyone! So easy and by all accounts, delicious. The only thing I modified was that I used milo instead of malt powder.

Wow, no cook, egg free chocolate ice cream! Very interesting. I’ve only made the traditional variety with an ice cream maker and cooking the anglaise on the stove top. Thanks for posting.

So you don’t have to chill it in fridge before churning in ice cream maker? Just wanted to make sure – other recipes I’ve seen call for chilling first before churning. Never made ice cream before, but just got an ice cream maker!!! Thank you.

    • Amber | Dessert Now Dinner Later Reply

Your heavy cream and milk should be cold from the fridge already, so no chilling required. Good luck! I hope you love it!

FAQs

What's the difference between a chocolate malt and a chocolate milkshake? ›

The biggest difference between a malt and a shake is that a malt is a milkshake made with the addition of malted milk powder. As a result, malts tend to have a toasty nuttiness and more of a milky sweetness in their flavor profile when compared to milkshakes.

What does malt do to ice cream? ›

What Is a Malt? A malt, or malted milkshake, is similar to a milkshake but also contains malted milk powder. Adding a spoonful of malted milk powder after the ice cream and milk are blended gives the beverage a sweeter and richer taste. This gives the drink a hint of umami to bring out the flavors of the ice cream.

How do you add malt to baked goods? ›

Non-diastatic malt powder and barley malt syrup will boost the sweetness and color of your baked goods. Diastatic malt powder will do all of that, plus your dough will rise faster. If you're adding it to a recipe that doesn't originally call for it, the recommended quantity is around 0.2% of the flour's weight.

Can you leave ice cream mixture in fridge overnight? ›

Thoroughly Chill the Custard

Some experts even recommend "aging" the mixture overnight in the refrigerator, which will enable the mixture to be aerated as much as possible in the maker, yielding the creamiest, smoothest ice cream.

How many days can homemade ice cream last? ›

Most ice cream experts agree that unopened commercial ice cream stored in the coldest part of your office freezer can last about two to four months (homemade ice cream made without preservatives lasts about one month). Freezer burn happens when moisture seeps into your ice cream, evaporates, and forms ice crystals.

How do you use chocolate malt? ›

Chocolate malt is used to add color and flavor to beer. When added in small quantities, it causes miniscule color adjustments in lighter beers. In larger quantities, it causes significant darkening of the beer. Chocolate malt can be used in any beer style.

Does McDonald's have chocolate malts? ›

McDonald's does indeed serve a chocolate milkshake, but there is no evidence of the chain making chocolate malted milkshakes. If the quote is merely the result of Trump's conflation of milkshakes and malts, the situation prompts clarification.

Is a malt or milkshake thicker? ›

A malt, or a "malted shake," is a milkshake made with the addition of malted milk powder. This gives the shake a bit of a toasty, rich taste that enhances classic milkshake flavors like chocolate or vanilla. It also creates a thicker consistency.

Can you freeze ice cream mixture before churning? ›

About 45 minutes after you first put your ice cream base into the freezer, take it out and rather vigorously churn it with a fork, spoon or electric hand mixer – you want to break up any frozen parts and mix everything together into a quite uniform “slush”.

What causes homemade ice cream not to freeze? ›

It can also be caused by low fat or sugar content. Fat doesn't freeze. And sugar lowers the freezing temperature of the water in our mixes. So they both keep our ice cream soft.
