I made these for the first time today, but it won't be the last! I realized after I started putting the ingredients together that I didn't have any butter in the house! I already had much of the batter put together so I took a chance and used a cup of canola oil. I also forgot to chill the batter, but they turned out great! I also added an extra egg after reading a comment on here about that.

FAQs

Why are my oatmeal cookies not soft? ›

Oatmeal cookies require more moisture to stay soft. Consider adding an extra egg yolk or a touch of milk to your dough to enhance moisture content.

Why aren't my cookies crispy? ›

The temperature of your oven plays a huge role in the texture of your cookies! A lower oven temperature will give your cookies more time to spread before they start to rise, resulting in a crispier cookie. I recommend baking your cookies for a bit longer at a lower temperature to achieve the texture you're looking for.

How do you make cookies softer? ›

Baking cookies quickly in a hot oven – at 375 degrees F as opposed to a lower temperature – will make for soft results. They'll bake fast instead of sitting and drying out in the oven's hot air. Ever so slightly underbaking your cookies will give you softer results than cooking them the full amount the recipe says.

Why do my cookies come out hard? ›

Hard cookies: you are over mixing, baking too long, baking at too high a temperature, or some combination of these. Cakey cookies: not enough brown sugar, too much or too little egg, too much flour, maybe you used baking powder instead of baking soda?

What is the secret to keeping cookies soft? ›

Keep Them Sealed

The key to keeping cookies fresh and soft is to seal them in an airtight container, like a resealable freezer bag. And here's a nifty little trick: add a piece of bread to the bag.

Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

What determines the crispness of a cookie what can cause a cookie to be too crisp or too soft? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

What does adding an extra egg do to cookies? ›

Because egg yolks contain lecithin and fat, they enrich the flavor and texture of chocolate chip cookies. If you prefer your cookies chewy rather than crispy, adding extra yolks will create a softer and more tender final product, and you can even save the extra whites for another dessert or dish.

How do you soften oatmeal cookies? ›

The best way to soften up those hard cookies is something you probably already have in your kitchen… bread! That's right, a piece of fresh bread will make those tough treats soft and chewy.

Does butter make cookies softer? ›

Butter gives flavor, tenderness and flaky layers to baked goods. It can also bring a bit of structure and rise. For instance, a chocolate chip cookie dough incorporates butter and sugar to incorporate air into the final result.

Why are my oatmeal cookies hard? ›

Overbaking is the most common cause of hard oatmeal cookies. Cookies continue to cook on the baking sheet even after they're removed from the oven, so try taking them out when they're just lightly golden and still a bit soft in the middle. They'll firm up as they cool, resulting in a chewier texture.

Why are my oatmeal cookies dry? ›

There are several reasons why the cookies may have become dry and crumbly but the two most likely are that either the cookies were baked for too long or too much flour was added to the dough. The cookie should be baked only until the edges are slightly golden and the top looks a little wrinkled.

Why do my oatmeal cookies get hard? ›

Cookies become hard when the moisture in them evaporates. This can be caused by leaving them out in the air for too long, baking them for too long, or storing them improperly.

Why are my oatmeal cookies so hard? ›

Overbaking is the most common cause of hard oatmeal cookies. Why are my oatmeal cookies flat and hard? ›

Oven temperatures are a crucial factor in baking. If your cookies consistently come out flat, you may have selected the wrong baking temperature. If you bake cookies using too much heat, the fats in the dough begin to melt before the other ingredients can cook together and form your cookie's rise.
