How Long Does It Last?

This Instant Pot lentil soup will last 3-5 days in an airtight container in your refrigerator after it is made.

The longer it is stored, the softer the lentils and carrots become. Luckily, the intensity of the flavor of the broth is absorbed into the lentils the longer it sits. So while the texture may be slightly different after a few days, the depth of flavor only increases.

Lentils aren't rice—they don't need to absorb every last drop of cooking liquid. They're more like pasta: best cooked in an abundance of water or stock. Bring your liquid up to a boil, add your lentils, then turn down your heat to a simmer for at least 25-30 minutes.

Why do red lentils turn to mush? ›

Yes, you can overcook lentils; they will become mushy. Much depends on the type of lentil you're using. Some cook quicker and hold their shape better than others. Why won't my lentils soften in soup? ›

You're not using enough water

According to the BBC, lentils need a whole lot of water to cook all of the way through. So use at least three times more water than lentils and avoid the temptation to salt the water. Adding salt can make the lentil's exterior tough and unappetizing (via Lentils.org).

Is it better to soak or boil lentils? ›

You do have to cook them, although soaking them first can have benefits. It does things to the enzymes that make the lentils less starchy and easier to digest with less gas. If you want them cold for a salad, you'll still have to cook them, then rinse in cool water.

How do I know when lentils are done? ›

Honestly, the best way to tell if lentils are done are to taste them. They should be tender to the bite, with some varieties of lentils being a bit more firm and others more soft. That said, if you would like your lentils to be softer, just simmer them a few minutes longer until they reaches your desired consistency.

Aim to soak your beans or lentils for at least 4 hours, and preferably overnight. Dump the soaking water (i.e. don't use it to cook the beans). Then be sure to give your beans/lentils a good rinse before cooking to wash away those gas-producing carbohydrates. Introduce them slowly.
