Chili-Garlic Salmon Crispy Rice Paper Dumplings

The easiest homemade dumplings filled with tender salmon—inspired by the 2021 TikTok trend!

It’s hard to keep up with all the TikTok food trends, but you shouldn’t sleep on one of the best and easiest ways to make "dumplings." In 2021, “firecracker salmon” was created by My Nguyen (@myhealthydish), wrapping rice paper (popular for Vietnamese summer rolls) around tender seared salmon, scallions, and jalapeño before searing the whole dumpling until crispy. Our version uses Cravings’ Chili-Garlic seasoning for extra kick and what we’re calling Everything Sauce for dipping. It’s super savory, slightly spicy, and tangy, and goes well with more ideas from our easy meal prep plan, like another TikTok-inspired fave: Creamy, Spicy Salmon Rice Lettuce Wraps!

INGREDIENTS DIRECTIONS

For the dumplings:

  • 1 (5 or 6-ounce) fillet of center-cut salmon, skin removed

  • ½ teaspoon Cravings’ Chili-Garlic seasoning (or 1 teaspoon garlic powder and ½ teaspoon Thai chili flakes, hot chili flakes, or cayenne)

  • 6 pieces rice paper wrapper

  • 2 scallions, green and pale green parts only, cut into 1 ½-inch pieces

  • 4 tablespoons canola or vegetable oil, divided

  • ½ jalapeño pepper, sliced into thin rounds

For the Everything Sauce:

Makes ⅓ cup

  • 2 tablespoons soy sauce

  • 1 tablespoon fish sauce

  • 1 teaspoon sugar

  • 3 tablespoons unseasoned rice vinegar

  • 1 tablespoon sesame oil

  • 1 teaspoon sriracha, or more if you like it spicier

  • ½ teaspoon garlic powder

  1. Make the Everything Sauce: Mix all the ingredients together in a small bowl and set aside.

  2. Cut the salmon fillet into six pieces, each about 1 inch wide. Season with the Chili-Garlic seasoning or another spice blend of your choice. Add 2 tablespoons of oil to a large skillet over medium heat and let it preheat for about 2 minutes. Sear the salmon for 2–3 minutes per side until golden brown (it won’t be cooked all the way through, but that will happen once you wrap and cook them!) Set aside on a plate to cool.

  3. Set up your dumpling-making station with a cutting board and a shallow, wide bowl, plate, or baking dish filled with a few inches of cold water. Working one at a time, let the rice paper wrapper soak in the water for 20–30 seconds, or until pliable. Let the excess water drip off and lay on the cutting board. In the center of the rice paper wrapper, add one piece of salmon, one slice of jalapeño, and two pieces of scallion. Pull the bottom of the rice paper wrapper (side closest to you) over the salmon and scallions, roll it away from you once, then fold in the sides and roll to close. Repeat with the remaining five pieces of salmon and rice paper and set aside on a plate.

  4. Wipe out the skillet you cooked the salmon in and add 2 more tablespoons of oil. Preheat the pan for about 3 minutes and then add the rice paper dumplings to the pan, making sure they have enough space around them so they won’t stick together! Sear for 2 minutes per side, or until golden brown. Remove from the pan and serve with a few tablespoons of Everything Sauce in a small bowl on the side. Reserve the rest of the Everything Sauce in an airtight container in the fridge for up to two weeks.
